
Crepes With Berries & Yoghurt

Ingredients
3/4 cup | plain flour |
2 tbs | hemp flour |
1/2 cup | milk of your choice |
2 | eggs, or two flax/chia eggs |
1/2 | lemon |
1 tbs | maple syrup |
coconut oil | |
1/2 cup | strawberries, chopped |
1/2 cup | blueberries |
1 tbs | dark chocolate, shaved |
1 tbs | yogurt of your choice |
toasted hemp seeds |
METHOD
- Pour the berries into a saucepan, squeeze in the lemon and add the maple syrup.
- Bring to the boil then turn down and simmer until berries are soft.
- Mix the flour, hemp flour, milk and egg together until smooth.
- Heat a frying pan with a little oil then add 1/4 cup of the batter.
- Swirl the pan around until you have an even layer then cook for just over a minute on each side.
- Do the same with the rest of the batter.
- Top the crepes with the berries, yogurt, chocolate and hemp seeds.
