Crepes with Berries & Yoghurt

Servings: 2 (VEG SF) >>>Prep Time: 2 mins >>>Cook Time: 15 mins

Ingredients

3/4 cup plain flour
2 tbs hemp flour
1/2 cup milk of your choice
2 eggs, or two flax/chia eggs
1/2 lemon
1 tbs maple syrup
coconut oil
1/2 cup strawberries, chopped
1/2 cup blueberries
1 tbs dark chocolate, shaved
1 tbs yogurt of your choice
toasted hemp seeds

METHOD

  • Pour the berries into a saucepan, squeeze in the lemon and add the maple syrup.
  • Bring to the boil then turn down and simmer until berries are soft.
  • Mix the flour, hemp flour, milk and egg together until smooth.
  • Heat a frying pan with a little oil then add 1/4 cup of the batter.
  • Swirl the pan around until you have an even layer then cook for just over a minute on each side.
  • Do the same with the rest of the batter.
  • Top the crepes with the berries, yogurt, chocolate and hemp seeds.

Hemp and Buckwheat Raw Porridge

SERVINGS: 1 (R VN GF DF SF)+ PREP TIME: 8 HRS+ COOK TIME: 5 MINS

Ingredients

For Porridge

3/4 cup raw buckwheat groats, soaked overnight in water
1 scoop hemp protein
just under 1/2 cup almond milk
1 tbs maple syrup
1/2 tsp cinnamon
1/4 tsp sea salt

 

For the chocolate sauce

1 tbs cacao powder
1 tbs maple syrup
1 tbs coconut oil, melted

 

To serve

fresh berries
coconut flakes to serve

METHOD

Drain and rinse the buckwheat.

Blend the porridge ingredients until smooth then pour into a bowl.

Mix the chocolate sauce ingredients together until smooth, swirl over the porridge then top with the berries.
